Warm Sweet Potato Pudding

1 pound sweet potatoes, peeled, chopped

1 pear, chopped

¾ teaspoon cinnamon

1/8 teaspoon nutmeg

1/3 cup stevia or honey

¼ cup macadamia nuts

2 tablespoons coconut oil         1 tablespoon coconut flakes

Cook sweet potatoes over med-high heat in water. In a small sauté pan over low heat, add pear with 1 teaspoon of water and allow to soften, 3 to 5 min. In a food processor, add nuts and pulse until a fine consistency. Add all ingredients to the food processor and blend until smooth. Place in bowls and sprinkle with coconut flakes. Serve warm. Serves 4
